Korean Pork Stir Fry

Ingredients
  

  • 1 lb 500g pork shoulder boneless, (excess fat trimmed)1

Marinade

  • 1 small 1/2 cup pear grated, (or nashi pear OR apple)
  • 1/2 medium 1/4 cup onion grated
  • 1/2 tsp ginger fresh, minced or finely chopped
  • 1 clove garlic crushed
  • 1 tbs soy sauce (all purpose or light soy sauce
  • 2 tbs brown sugar
  • 2 tsp sesame oil
  • 3 tbs gochujang (Korean Hot Pepper Paste)3

Stir fry

  • 1 tbs oil
  • 1 clove garlic minced
  • 1 onion halved and sliced

To serve

  • 1 stalk scallion / shallot, sliced
  • sesame seeds

Instructions
 

  • Cut pork into thin slices. If using pork shoulder, as I did, halve it lengthwise to form two long pieces, then slice the pieces.
  • Combine Marinade ingredients in a bowl. Add pork. Marinate for 30 minutes, or overnight.
  • To cook, heat oil in a large non stick skillet4 over high heat. Add garlic and onion, cook for 2 minutes until translucent. Add pork and cook for 5 minutes or until dark golden and caramelized, and just cooked through. Serve immediately with rice, garnished with sliced shallots and sesame seeds.

Korean Pork Stir Fry

The marinade for this stir fry is an authentic Korean Marinade for Spicy Korean BBQ Pork. It's so jammy and loaded with flavor, it's brilliant for using as a stir fry. I made this with pork but it goes great with beef and chicken too.
NOTES
1 Pork shoulder is ideal as has a bit of fat marbled through it. It will also work with any thinly sliced pork cuts suitable for stir-frying, like tenderloin.
2 This recipe works best with pear, nashi pear, or as a last substitute, red apple.
3 Gochujang is a spicy, savory paste that is used in a lot of Korean food. If you can't get gochujang you can achieve a similar flavor by combining 2 tbsp sriracha + 1 tbsp miso paste + ½ tsp sugar (white or brown). The stir fry does not taste exactly the same but is similar.
4 A non-stick pan is strongly recommended as the sugars may stick.
