
Oatmeal Breakfast Cookies
Ingredients
- 1 1/2 cups quick-cooking oats
- 1/4 cup almonds finely chopped
- 1/4 cup ground flax seeds
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup dates finely chopped
- 1/3 cup yogurt soy
- 2 tbs coconut oil warmed
- 2 tbs maple syrup
Instructions
- Preheat oven to 350 degrees F. and line a baking sheet with parchment paper.
- In a large bowl, stir together oats, almonds, flax, baking soda, and salt.
- Add dates and use your hands to evenly distribute them through oat mixture.
- In a small bowl, whisk together yogurt, coconut oil, and maple syrup.
- Add yogurt mixture to oat mixture and stir to form a dough.
- Place 1/4-cupful measures of dough onto the prepared baking sheet. Pat the dough into round cookies.
- Bake for 15 to 18 minutes or until the cookies are golden.
- Cool on the baking sheet for 5 minutes then transfer cookies to a wire rack to cool completely.
- Store cookies in an airtight container in the refrigerator or freezer.
- To heat, place in the toaster or microwave.
