
Raspberry Lemon Muffins
Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 tbs baking powder
- 1/2 tsp salt
- 2 eggs
- 1 cup half and half
- 1/2 cup vegetable oil
- 1 tsp lemon extract
- 1 1/2 cups raspberries fresh or frozen
Instructions
- Combine eggs, cream, oil and extract, combine dry ingredients and into creamed mixture until moistened. Fold in raspberries. Fill paper lined muffin cups 2/3 full. Bake at 400 for 18-20 minutes or until golden brown
