BEEF AND SWEET POTATO TURNOVERS

Ingredients

  • 1 tbs. olive oil
  • 1.2 lb. ground beef
  • 1 sweet potato
  • 2 cups baby spinach
  • kosher salt to taste
  • black pepper to taste
  • 2 sheets frozen puff pastry thawed and halved
  • 1/2 cup Cheddar cheese grated

Instructions

  • Heat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside. Place a large skillet over medium-high heat and add oil. Add beef and break it apart with a spoon while it cooks. Cook until no longer pink, 3 to 4 minutes. Stir in garlic.
  • Add sweet potato, spinach, ½ teaspoon salt, and ¼ teaspoon pepper to the pan. Toss ingredients together. Spoon the beef mixture onto one side of each piece of puff pastry and leave a ¼-inch border to ensure turnovers are not overfilled. Divide the mixture evenly among all turnovers.
  • Top the beef mixture with cheese and fold dough over the filling. Press firmly to seal. Place turnovers on the baking sheet and bake for 20 to 25 minutes, or until golden brown.
