BREAKFAST SKILLET - SM

Ingredients

  • 1/4 cup butter
  • 3 cups hash-brown potatoes loose-pack frozen
  • 1/4 cup onion chopped
  • 1/2 cup green pepper chopped
  • 4 eggs slightly beaten
  • 1 pkg brown and serve sausages
  • 1/2 cup Cheddar cheese sharp, shredded

Instructions

  • In the electric skillet, melt butter at 350 degrees. Add potatoes, onion and green pepper. Season to taste, stir to combine. Cover and cook over low heat (250 degrees) for 15 minutes stirring occasionally.
  • Brown sausage in second small skillet or microwave and set aside. Pour eggs evenly over top of cooked potatoes. Arrange sausages in "spokes" on top. Cover; cook over low heat 10 minutes until eggs set. Top with cheese; cover until cheese melts. Cut in wedges. Serves 5-6.
