IRISH SODA BREAD

Ingredients

  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 2 tsp Baking powder
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 3/4 cup Raisins
  • 1 pt sour cream (16 oz) the full fat variety, not reduced-fat.
  • 1 large egg beaten

Instructions

  • Preheat oven to 350*F. Grease 8 inch round layer cake pan. In large, bowl, mix first 5 ingredients; stir in raisins. With a spoon, stir in sour cream and egg until blended and dough forms. Turn dough onto floured pastry cloth; knead greatly 10 to 12 times. Shape dough into a ball; place in the cake pan. Dust top of ball lightly with flour.
  • With a sharp-knife, cut an "X" on top of ball. Bake 60 to 70 minutes until toothpick comes out clean and bread is well-browned. Cool in pan. 10 minutes then remove from pan and cool on a cooling rack. Makes one loaf
  • Note: I have aluminum cake pans and usually bake mine 70 minutes. A dark-colored cake pan absorbs heat and may take less time to bake. Test with bamboo skewer. When in doubt, bake the full 70 minutes.
