RICE PUDDING

Ingredients

  • 2 eggs slightly beaten
  • 2 cups cooked rice
  • 1 cup evaporated milk
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/2 cup raisins
  • 1 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1/4 tsp cinnamon ground

Instructions

  • combine all ingredients in a large bowl and mix thoroughly. pour into a greased 1 1/2 quart baking dish. Set dish in a shallow pan holding 1 inch of hot water. Bake 45 minutes in a moderate ( 350*F. ) oven. or until pudding is firm at the edges, serve warm or cold
