THE OLD WITCH'S MAGIC NUT CAKE
Ingredients
- 3 eggs
- 1 can pure pumpkin 1 lb size
- 3/4 cup vegetable oil
- 1/2 cup water
- 2 1/2 cup all-purpose flour
- 2 1/4 cup sugar
- 1 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 tsp nutmeg
- 3/4 tsp cinnamon
- 1 cup raisins Yellow
- 1/2 cup walnuts chopped
Frosting
- 4 oz cream cheese
- 3 tbs butter
- 1 tsp lemon extract
- 1/2 box confectioners sugar
Instructions
- Beat together the eggs, pumpkin, oil and water
- Add: flour, sugar, baking soda, nutmeg, cinnamon, raisins and walnuts
- Pour the batter into a Tub pan and place in oven at 350* F. for 1 hour & 45 minutes. or until a Straw From a Witch's Broom, Inserted in The Cake, comes out Clean.
- Cool the cake and Frost and sprinkle with Chopped Walnuts
