
CORN & ZUCCHINI FRITTATA
Ingredients
- 1/2 onion shredded on cone #2
- 3-4 cloves Garlic finely chopped
- 1/2 zucchini shredded, on cone #2
- 1/2 cup corn frozen
- 1 potato cut long ways then sliced on Cone #4
- 5 Eggs
- 3 Egg Whites
- 3 tbs Milk
- Salt & Pepper to taste
- 4 tbs Cheese shredded, on Cone #1
Instructions
- preheat griddle over medium heat. when several drops of water sprinkled on griddle skater and dissipate, add onions, and garlice and saute until onions are soft about 5 minutes.
- Add zucchini, corn and potatoes and continue to saute for another 5 minutes.
- IN bowl whisk together eggs, egg whites, milk and salt and pepper. add mixture to vegetables evenly.
- cook mixture over med low heat for 3 minutes then cover with large lid and continue to cook for 8-10 ,minutes.
- Sprinkle cheese on top and recover for additional 1-2 minutes. Serve warm.
