CORN & ZUCCHINI FRITTATA

Ingredients
  

  • 1/2 onion shredded on cone #2
  • 3-4 cloves Garlic finely chopped
  • 1/2 zucchini shredded, on cone #2
  • 1/2 cup corn frozen
  • 1 potato cut long ways then sliced on Cone #4
  • 5 Eggs
  • 3 Egg Whites
  • 3 tbs Milk
  • Salt & Pepper to taste
  • 4 tbs Cheese shredded, on Cone #1

Instructions
 

  • preheat griddle over medium heat. when several drops of water sprinkled on griddle skater and dissipate, add onions, and garlice and saute until onions are soft about 5 minutes.
  • Add zucchini, corn and potatoes and continue to saute for another 5 minutes.
  • IN bowl whisk together eggs, egg whites, milk and salt and pepper. add mixture to vegetables evenly.
  • cook mixture over med low heat for 3 minutes then cover with large lid and continue to cook for 8-10 ,minutes.
  • Sprinkle cheese on top and recover for additional 1-2 minutes. Serve warm.
