
Easy Vegetable Fried Rice
Ingredients
- 1/4 cup vegetable oil
- 3 eggs slightly beaten
- 1 bag 14.4 oz frozen broccoli stir-fry vegetables
- 2 cloves garlic finely chopped
- 4 cups white rice cooked
- 1/3 cup soy sauce
Instructions
- In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Add eggs; cook and stir until eggs are set. Remove to plate; keep warm.
- In same skillet, heat remaining 3 tablespoons oil over medium-high heat. Add frozen stir-fry vegetables and garlic; cook 4 to 6 minutes, stirring occasionally, until vegetables are heated. Stir in eggs, rice and soy sauce; cook 3 to 4 minutes, stirring occasionally, until thoroughly heated.
- Expert Tips: Add cooked chicken, or shrimp, if desired. Cooked brown rice can be substituted for the white rice in this recipe.
