Course Beef, Main dishes, Pork, Poultry, Reference

Instructions

  • Always preheat skillet to fry
  • And you will always leave the lid cracked
  • You will preheat piece if cooking a meat or egg by itself. Meaning if cooking meat with other items, do not preheat.
  • Place the chicken, por chops, steak fish, etc in the preheated pan and press down. The meat will pop and sizzle and will stick where you put it. This is a good thing because it will sear the meat and make it easy to turn when the side is done cooking. (you will know that side is done because it releases itself easliy hen trying to flip. IF it's really hard to flip it's not ready)

Chicken Thighs

  • Preheat skillet to 450* preheated when red lights stop flashing and disappears) Throw chicken right onto skillet. 15 min per side. It does not fry as well if you leave the skin on. When you flip the chicken turn it down to 350* if cooking with bone in. If you would like it less crispy then turn down when flip or close the lid when flip.

Chicken Breasts

  • Preheat skillet to 400* and throw into skillet. About 12 min per side. But breasts do not fry as well as thighs due to not having as much touch the skillet.

Pork Chops

  • Preheat to 325* Thin cuts 5 min/side. Thick cuts 9 min/side.

Roasting Beef, Pork, Chicken

  • Preheat the pan to 400*. Sear the roast uncovered and unseasoned for about 5-6 min on 1 side. then turn and brown uncooked side. Now season the meat and add vegetables. Cover the pan with lid fully closed. When it clicks turn it to 200* and cook for 20 min per pound of meat.

Roasting Whole Chickens, Ducks or Turkeys

  • When roasting whole birds, start with a cold pan. Take theh chicken, duck, turkey out of the bag and remove the giblets from the cavity. Wash the bird under cold running water and leave wet. Season the bird and place into a cold pan. Use the pan size that best fits the bird. Cover the pan and place on the med (350* in electric skillet) When it clicks lower it to 200*. Allow it to cook 20 min per pound after you turn it to low.
  • To Brown it: Turn on broiler and place 8-10 inches from broiler coil and brown for 4-5 min.

Notes

Any meat including chicken with our without skin, can be “fried” in your Saladmaster® cookware without added fat or oil.  The secret is in preheating.  Preheat the large or small skillet over medium heat 2 to 3 minutes until a few drops of water splashed on the surface bead and dance.  Place meat firmly into preheated skillet and press down to ensure even searing.  Brown the meat or chicken on all sides.  If additional cooking is required, place the cover slightly ajar on top of the skillet and cook to desired doneness.  Always choose the skillet large enough to hold the meat without crowding or cook the meat in small batches if necessary.
