
Sugar Free Jello Frosting
Ingredients
- 3 oz pkg jello (pick your flavor/color, not sugar free)
- 2/3 cup sugar
- 1 egg white
- 1 tsp vanilla
- 1/2 cup boiling water (must be boiling to dissolve the sugar)
Instructions
- Put everything except boiling water in the metal/glass bowl of your stand mixer fitted with whip attachment.
- Turn the mixer to high just as you add the 1/2 C boiling water.
- Whip on high for five minutes. I literally used a timer and #10 on my KitchenAid.
- Will frost 24 cupcakes or 9x13 cake.

They'll be wide-eyed just watching the jello turn from red liquid to pink marshmallow fluff.
It's a very light, silky icing that has the faint flavor of the jello.
I used cherry, the color is bright pink with little flecks of red-very pretty!

Coleen suggests this is best eaten the day it's made-not a problem.
Notes: Try to not let the cupcakes touch, the icing will stick to each other and break off.
