
LENTIL MANGO WRAPS
Ingredients
Sauce:
- 2 tbs soy sauce
- 1 tbs almond butter
- 1 + tbs asian chili sauce
- 1/2 inch knob ginger minced ( cone #1 )
- 1 clove garlic minced ( cone #1 )
- 1/4 tsp garlic powder
- 1 tsp sesame oil
- 2 tbs maple syrup
- 2 tbs rice vinegar
Garnish:
- 1 mango Ripe, peeled and shredded using ( cone #2 )
- cilantro fresh
- romaine hearts
Lentils
- 1/2 cup dry brown lentils
- 1 1/2 cup water
- 1/8 tsp salt
- dash black pepper
Instructions
- Wash and soak the lentils for at least have an hour in warm water.
- Drain, wash and add the lentil, salt, peper and 1.5 cups water in 3 QT.
- Cook covered on medium heat. Reduce heat to medium-low once the water comes to a rapid boil. Check for doneness after 30 minues.
- Cook uncovered until lentils are tender and the water is almost all gone. ( 4-5 minutes ).
- Add the sauce to the lentils, bring to a boil at medium and simmer for 4 minutes on low-medium. done. Should be a thicker consistency.
- Taste and adjust spice if needed.
- Load up Romaine Hearts with the lentils, chopped mango, and cilantro serve.
Notes
*Serves 3-4 time to prepare 10-15 minutes with lentils pre-cooked
