Old Fashioned Tapioca Pudding

Ingredients
  

Small Pearl Tapioca

  • 1/3 cup small pearl tapioca
  • 3/4 cup water
  • 2 1/4 cups milk 2%
  • 1/4 tsp sea salt
  • 2 eggs separeted
  • 1/2 cup sugar
  • 1/2 tsp vanilla

Large Pearl Tapioca

  • 1/2 cup large pearl tapioca
  • 1 1/2 cups cold water
  • 1 qt milk
  • 3/4 cup sugar
  • 3 eggs beaten
  • 3/4 cup sugar
  • 3/4 tsp vanilla

Tapioca Granules

  • 1 qt milk whole or 2%
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup tapioca granules
  • 1/2 tsp vanilla

Instructions
 

Small Pearl Tapioca

  • Soak tapioca in water for 30 minutes in a 1-1/2 quart saucepan. Add milk, salt and lightly beaten egg yolks to tapioca and stir over medium heat until boiling. Simmer uncovered over very low heat for 10-15 minutes. Stir often. Beat egg whites with sugar until soft peaks form. Fold about 3/4 cup of hot tapioca into the egg whites, then gently fold mixture back into the saucepan. Stir over low heat for about 3 minutes. Cool 15 minutes then add vanilla.
  • Serve warm or chilled, plain or with fruits, nutmeg or coconut mixed in. Makes 3-1/2 cups (4 servings).
  • You may opt to consider this the finishing point or you may wish to go one step further to arrive at "Tapioca Nirvana!" Whip the chilled heavy cream till peaks form. Fold into cooled/chilled tapioca.

Large Pearl Tapioca

  • Soak 1/2 cup of tapioca overnight in 1 1/2 cups cold water. Mix 1 qt. milk and 3/4 cup sugar. Bring to boil. Drain water off tapioca, add tapioca to milk. Cook and stir till tapioca is clear (at least 30 min.). Then combine 3 beaten eggs, 3/4 cup sugar, and 3/4 tsp. vanilla. Add to the above mixture and bring to a full boil. Makes about 2 quarts.

Tapioca Granules

  • In a heavy 2 quart saucepan beat sugar, salt & eggs together well. Add milk & tapioca, mix well with the other ingredients. Over med. high heat bring almost to a boil. Stir constantly to avoid scorching. When it starts to thicken, remove from heat; add vanilla; chill.

Notes

It is the repeated precooking which makes MINUTE� Tapioca so quick and easy to prepare in home kitchens. Other tapioca pearls MUST be soaked before cooking. Let small or giant tapioca pearls soak in water at least two hours or up to two and one half. Check if pearls are squishy on the outside and pasty in the center, which is what you want. Do not pre-soak any longer since pearls tend to get too mushy.
Good tapioca pudding has a smooth, custardy texture with discreet tender pearls. Once tapioca is added to any liquid, don't let the mixture boil or the tapioca may get stringy. Over stirring a tapioca mixture while cooking or cooling also produces a sticky, gelatinous texture.
