
Pumpkin chocolate loaf
Ingredients
- 3 1/2 cups sugar
- 1 1/4 cups vegetable oil
- 3 eggs
- 1 can pumpkin solid pack
- 3 squares unsweetened chocolate melted and cooled
- 1 1/2 tsp vanilla
- 3 3/4 cup all-purpose flour
- 1 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1 1/4 tsp baking soda
- 1 1/4 tsp cinnamon
- 1/2 tsp nutmeg ground
- 2 cups semisweet chocolate chips
Instructions
- In a large bowl combine sugar and oil, add eggs; mix well. Stir in pumpkin, chocolate and vanilla; mix well. Combine the dry ingredients and stir into pumpkin mixture until just blended.
- Pour into 3 greased loaf pans; Bake at 350 for 55- 65 minutes or until a toothpick inserted near center comes out clean. Cool 10 minutes before removing from pans to wire racks. Cool completely; can be frozen up to 6 months.
