
Streusel-Topped Sweet Potatoes
Ingredients
- 6 cups sweet potatoes 1-inch pieces, peeled
- 1/2 cups rolled oats regular
- 1/4 cup brown sugar packed
- 2 tbs flax seeds
- 2 tbs cracked wheat toasted wheat bran, or toasted wheat germ
- 1/4 tsp salt
- 2 tbs butter
- 2 tbs pecans , walnuts, or pistachio nuts, coarsely chopped
Instructions
- Preheat oven to 375 degrees F. Lightly grease a 2-quart baking dish. Arrange sweet potatoes in the prepared baking dish. Bake, covered, for 30 minutes.
- Meanwhile, in a medium bowl combine oats, brown sugar, flax seeds, cracked wheat, and salt. Cut in butter until crumbly. Stir in pecans. Stir potatoes; sprinkle with oat mixture.
- Bake, uncovered, about 15 minutes more or until potatoes are tender and topping is light brown.
