
Rhubarb upside down cake
Ingredients
- 3 cups rhubarb
- 3/4 cups sugar
- 4 tbs butter
- 2 tbs butter
- 1/3 cup sugar
- 1 egg
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/3 cup milk
- 1 tsp vanilla
Instructions
- Place rhubarb in bottom of 8x8 greased baking pan, top with ¾ cup sugar and dot with 4 tbs butter. In a mixing bowl combine rest of ingredients, mix well and pour over top of rhubarb. Bake at 400 for 25- 30 minutes or until done and top is golden tan
