Green Tea Pistachio Ice Cream
Servings 3 to 4 / MAKES: 3 cups 1½ pints
- 1 cup cashews
- 1/4 cup maple syrup
- 2 tbs. lemon juice fresh
- 1/4 cup coconut milk or almond milk, canned
- 1 tbs. matcha green tea powder
- 2 bananas frozen
- 1/3 cup pistachios pieces
COVER cashews in water and soak overnight. Rinse and drain.
BLEND together cashews and remaining ingredients until thick and creamy.
TRANSFER to a loaf pan and freeze 4 hours before serving.
This creamy vegan confection has healthy written all over it, thanks to the double dose of antioxidants from matcha powder and pistachios.
