Pecan Patty-Cakes

Ingredients

  • 2 eggs
  • 1/2 cup all-purpose flour
  • 3/4 cup pecans chopped + 1 whole nut for each muffin
  • 3/4 cup dates chopped
  • 1 cup brown sugar
  • 1/4 tsp baking powder
  • 1/3 tsp salt

Instructions

  • Beat the eggs slightly in a mixing bowl and add the other ingredients in the order given. Fill tiny oiled muffin pans two-thirds full of mixture and place a whole pecan on each. Bake in a moderate oven (375*) for 15 minutes
