
Pecan Patty-Cakes
Ingredients
- 2 eggs
- 1/2 cup all-purpose flour
- 3/4 cup pecans chopped + 1 whole nut for each muffin
- 3/4 cup dates chopped
- 1 cup brown sugar
- 1/4 tsp baking powder
- 1/3 tsp salt
Instructions
- Beat the eggs slightly in a mixing bowl and add the other ingredients in the order given. Fill tiny oiled muffin pans two-thirds full of mixture and place a whole pecan on each. Bake in a moderate oven (375*) for 15 minutes
