
TACO SALAD
Ingredients
- 2 ripe avocados diced
- 1 can refried beans
- taco or hot sauce to taste
- sour cream
- all-purpose flour to thicken if needed
- 1 head lettuce washed, drained and shredded
- 2 ripe tomatoes diced
- 1 large onion diced
- 1 can olives shredded
- 1 carrot shredded
- 1 lb lean ground beef browned, crumbled, drained and seasoned with taco seasoning (optional)
- taco seasoning (if using)
- 1/2 lb Cheddar cheese sharp, shredded
- chips or crackers for scooping
Instructions
- Spread refried beans on serving plate
- Mash the avocados and spread on top of refried beans.
- Mix sour cream with taco or hot sauce and add a bit of flour, if needed, to thicken mixture
- Continue layering ingredients; Lettuce, carrot, tomatoes, sour cream mixture, onion, olives, (and grounded beef if using)
- Top with cheddar cheese and serve with plenty of chips for scooping. Enjoy!!
