TACO SALAD

Ingredients

  • 2 ripe avocados diced
  • 1 can refried beans
  • taco or hot sauce to taste
  • sour cream
  • all-purpose flour to thicken if needed
  • 1 head lettuce washed, drained and shredded
  • 2 ripe tomatoes diced
  • 1 large onion diced
  • 1 can olives shredded
  • 1 carrot shredded
  • 1 lb lean ground beef browned, crumbled, drained and seasoned with taco seasoning (optional)
  • taco seasoning (if using)
  • 1/2 lb Cheddar cheese sharp, shredded
  • chips or crackers for scooping

Instructions

  • Spread refried beans on serving plate
  • Mash the avocados and spread on top of refried beans.
  • Mix sour cream with taco or hot sauce and add a bit of flour, if needed, to thicken mixture
  • Continue layering ingredients; Lettuce, carrot, tomatoes, sour cream mixture, onion, olives, (and grounded beef if using)
  • Top with cheddar cheese and serve with plenty of chips for scooping. Enjoy!!
