VEGETABLE STEW

Ingredients

  • 1 clove garlic minced, cone #1
  • 1/2 onion cut, cone #3
  • 2 large carrots cut, cone #3
  • 1 large celery cut, cone #3
  • 4 large potatoes cut into cubes or use cone #3
  • 1/4 tsp chili powder
  • 1/4 tsp paprika
  • 1 small yellow squash cut into cubes or use cone #3
  • 3 cups spinach fresh leaves
  • 2/3 cups corn frozen or fresh
  • 16 oz pinto beans
  • 4 cups vegetable broth always look for low sodium
  • 4 oz chopped green chilies (if you like spice add 12 oz)

Instructions

  • Pre heat MP5 or pot to 350 degrees or medium heat.
  • Add garlic and onion and sauté 2-3 min.
  • Add all other ingredients excluding fresh spinach.
  • Bring just to a boil then place lid on and reduce heat to med-low and cook 30 min.
  • Add spinach just before serving for a great flavor and fantastic colors!
