
VEGETABLE STEW
Ingredients
- 1 clove garlic minced, cone #1
- 1/2 onion cut, cone #3
- 2 large carrots cut, cone #3
- 1 large celery cut, cone #3
- 4 large potatoes cut into cubes or use cone #3
- 1/4 tsp chili powder
- 1/4 tsp paprika
- 1 small yellow squash cut into cubes or use cone #3
- 3 cups spinach fresh leaves
- 2/3 cups corn frozen or fresh
- 16 oz pinto beans
- 4 cups vegetable broth always look for low sodium
- 4 oz chopped green chilies (if you like spice add 12 oz)
Instructions
- Pre heat MP5 or pot to 350 degrees or medium heat.
- Add garlic and onion and sauté 2-3 min.
- Add all other ingredients excluding fresh spinach.
- Bring just to a boil then place lid on and reduce heat to med-low and cook 30 min.
- Add spinach just before serving for a great flavor and fantastic colors!
