
XTREME DIET SOUP
Ingredients
- 2 tbs olive oil
- 2 large white onions thinly sliced
- 1 1/2 lbs chicken breast boneless, skinless, diced
- 1 large carrot finely shredded
- 2 cloves garlic minced
- 1 Jalapeno pepper with seeds minced
- 1 tsp thyme dried, or 2 tsp minced fresh thyme
- 1 tsp oregano
- 8 cups chicken broth
- 1 can black beans ( 15 oz )
- 6 cups baby spinach fresh, packed
- 1 large tomato finely diced
- salt & pepper to taste
- 7 tbs parmesan cheese grated
- lemon wedges ( optional )
Instructions
- Heat oil in a large stockpot over medium heat. Add onions, stirring occiasionally, for 10 minutes. Add chicken stirring occasionally, for 5 minutes more, or until chicken is cooked throgh and onions are lightly browned. Add carrot, garlic, jalapeno, thyme and oregano. cook another 2 minutes. Stir in broth and increase heat to high, bring to boil.
- Add beans, spinach and tomato. Bring back to boil, then turn off the heat. Add salt & pepper to taste.
- Sprinkle each serving with 1 tbs, Parmesan cheese. If desired. Enjoy with a squirt of lemon.
Notes
Following the plan is a cinch. Simply eat two servings of soup and drink as much water as you like.
