
MEXICAN CORNBREAD
Ingredients
- 1/2 tsp baking soda
- 1 cup cornmeal
- 1/2 cup all-purpose flour (not from oma's recipe)
- 1/2 tsp salt
- 1 cup buttermilk option (1/2 cup sour cream + 1/2 cup milk)
- 2 eggs
- 1/4 cup oil
- 2 1/2 cups cream style corn
- 1/2 lb cheese grated
- 1 can chopped green chilies (4 oz) optional (or 2 oz candied Jalapenos)
- 3 tbs onion chopped
Instructions
- Sift together soda cornmeal & salt. Add buttermilk, eggs, oil & corn. Stir in onion, chilies and cheese. Pour into a well-greased & heated cast iron skillet. Bake at 400* F for 1 hour
